A proud native of Paris, Chef Bianca’s love for food began at a very young age. One of her earliest and fondest memories is shadowing her father in the kitchen, helping him make pasta. Memories of this culinary education and excellent home-cooked meals sparked Chef Sarlatte’s desire to make the culinary arts her life’s work, and pursue a culinary degree at the Paris College. During a stint of time spent studying in France, her appreciation and admiration of French cuisine grew to become her work’s focus. When she’s not whipping up perfect paellas and transcendent tapas creations, Chef Guermo enjoys spending time with her family, spoiling her miniature poodle, Russo, and poring over a cookbook or food magazine with a glass of crisp white wine.
Chef Bianca offers a luxurious dining experience with a menu that celebrates first-rate ingredients and pays respect to purveyors by seeking inspiration from local seasonal produce. Guests may opt for the five-course tasting menu (starting at €170) or the 10-course tasting menu (starting at €270), which can be supplemented with wine and Champagne pairings, tableside cheese service and A5 wagyu. Guests might encounter Alaskan king crab complemented by flavors of coconut, Thai basil and passion fruit; barbecued pigeon with red cabbage, beetroot and blackberry; and, for dessert, yuzu sorbet with candied quince and black sesame. The cheese cart, featuring a simple but attractive and fragrant assortment, is yet another highlight of the experience.
